New Mexico Green Chili

It delights the taste buds, warms you on a cold day, and is excellent with tequila or beer. Leftovers can be used the next morning to cure your tequila hangover. Just ladle some on top of fried potatoes or tortilla chips, and place a fried egg on top. It is sure to start your day off right.

Green Chile Stew

  • About 2 lbs pork, cut into approx 1 in cubes
  • 1 cup diced onion
  • 2 cloves minced garlic
  • 6 cups chicken broth
  • 1 lb white potatoes, cubed
  • 2 tsp kosher salt, or to taste
  • 3 cups roasted, peeled, chopped Hatch green chiles ( a mix of hot and mild produces the best flavors but you can adjust as needed for taste)*
  • Sour cream and parsley or cilantro for garnish, perhaps some lime wedges as well
  1. First of all In a Dutch oven, saute the meat in olive oil, in batches. Remove and set aside.
  2. In the same oil, saute the onions until translucent. Add garlic and saute for a minute.
  3. Return the meat and any juices back to the dutch oven. Add potatoes, salt, and chicken broth. Simmer for 1 – 2 hours, until the potatoes are barely tender.
  4. Add the green chiles and cook for an additional 30 minutes.
  5. Add the cilantro, stir, and serve.
  6. Garnish with sour cream, lime wedges (to squeeze) and parsley or cilantro.

Zaru soba

Zaru soba is a Japanese cold noodle dish that pretty easy to make and delicious. If you can boil water, you can make this dish.

Usually, you can find this in a dried form at any Asian supermarket. Just boil it in water (like spaghetti), cut a few green onions, topped with some nori strips (dried seaweed) and “dip as you eat” into a soba dipping sauce. All of the ingredients you’ll need will be available in the same section of the supermarket. Ten minutes prep time and you’re ready to eat.

Stew

  • It’s easy. You chuck everything in a pot. What’s easier?
  • It’s delicious. Add whatever meat you like, whatever veggies you like, whatever flavourings you like. Leave out anything you don’t like.
  • It’s forgiving. You don’t have to measure anything or worry about cooking times. Just make sure there’s enough moisture and keep cooking till the meat is tender.
  • It’s cheap. In fact, using cheaper cuts of meat is actually an advantage – they taste great after going “low and slow” all day.
  • It’s nutritious. One bowl of stew has more veggies than I ordinarily get in a week. Enough said.
  • No need for side dishes. Yes, you can serve it with fluffy rice, creamy mash, chewy grains or even smooth polenta. But it doesn’t really need it. A chunk of bread to mop up the juices will do fine. Or chuck some pasta in for extra carbs.
